This means picking the individual grape varieties in small batches, obtained by applying extreme and meticulous fragmentation to the vineyards.
This is the only way possible to be sure of interpreting and enhancing our terroir to the fullest, obtaining from it the highest number of shades possible. 

An accent on nature.

We believe in the potential of a fruit that grows and matures according to its own rhythms and to external stresses. Just like the human body, the more complex the ecosystem is the more it is able to defend itself, regenerate itself and strengthen itself season after season. We blindly trust our nature.

An accent on manual skills.

We select and pick the grapes by hand, accompanying them step by step until they are processed in the cellar and refined in our Bottaia to guarantee the best expression of raw material’s identity and typicality.

Ours is a winemaking of precision based on a scrupulous and profound fragmentation process, aimed at obtaining a triple objective: enhancement of the territorial identity, exaltation of the structural diversity and defense of the original organoleptic property.

From a health point of view, in fact, a careful fragmentation of the grapes guarantees a pure product, free from any kind of “seasoning” that can somehow alter the taste and the composition of the wine. The grapes themselves, properly selected and combined, generate an alchemy that is pleasing to the palate and at the same time respectful of our body.

An accent on gravity.

The interpretation that we make of the grapes is so bold and creative but above all determined to keep intact the original excellence. To obtain uniqueness we therefore rely on a force: gravity. It is called “fall method”, and here on Lake Garda was our first choice, a technique inextricably linked to respecting the raw material.

Thanks to this delicate strength, the transformation of the product during fermentation is always accurate and conscientious. This is how we work our grapes: handling them delicately and letting them fall naturally one on top of another.

An accent on experimentation.

When the winemaking process does not encounter deviations, here we reach the true concept of purity: the most faithful expression of the intrinsic quality of each blend, obtained by handling the raw material as little as possible. With this philosophy, the method becomes an approach, fermentation becomes infusion and winemaking becomes innovation. These are the intelligent techniques that we have chosen to adopt and that allow us to process the pure ingredient, in order to obtain from it the best of the selection.

Ceramic Clayver to accentuate the best of white grapes

It is an “intimate” winemaking: the white grapes are laid undisturbed into precious ceramic barrels so that their essence, at the end of a naturally beneficial path, manifests itself in all its purity.

Vinification Intégrale to accentuate the best red grapes selection

It is a slow and delicate extraction process: in a word, integral. A long journey in wooden barrels after which the red grapes release all the soul contained in the fruit.
