Agronomy and pedology
Soils: morainic – medium texture, rich in clay and minerals like manganese, iron and calcium; the subsoil is rich in springs that keep the roots of the vines always hydrated. Organic substances are renewed throughout green manures. Vine training system: guyot, 5000 vines/ha; manual replacement of vines that fail to germinate Yield per hectare: 6/9 tons/ha Altitude: from 140 to 170 meters above the sea level Exposure: north-west/south-east and north/south Vine cultivation: organic certified, low-impact cultivation according to the lunar calendar Harvest: manual in boxes between the last week of August and the first half of September
Wine Making
Selection: vibrant selection belt, manual selection belt, destemming, mechanical selection of the berries Mashing: soft pressing – of non crushed grapes – in pneumatic press fractionation of the grapes and only use of the resulting flower must Fermentation: thermo-controlled at 10°C in inox until the sugars are exhausted Aging in wood: 10 months in French oak tonneau of first, second and third use Bottling: in August with the waning moon Aging in bottle: 6 months
Wine tasting
Between 6° and 8°C in Renano wine glass. The nose gives an elegant complexity made of white flowers, pearand white pepper. The balanced and savory palate expresses hints of pear, apple and cedar. It closes dry and long, with hints of fresh almonds. Glacies is a wine suitable for pairing with first and second courses of fish, white meat and medium-aged cheeses.
Conservation
In a cool and dark place, lying down, preferably between 12° and 18°C. Aging potential: 5/10 years.
