our Chiaretto Brut.
A Bardolino dressed in pink bubbles, result of patience, which delights the palate with grapefruit, cherry, peach and blueberry.

Agronomy and pedology

Soils: morainic – medium texture, rich in clay and minerals like manganese, iron and calcium; the subsoil is rich in springs that keep the roots of the vines always hydrated. Organic substances are renewed throughout green manures.
Vine training system: guyot, 5000 vines/ha; manual replacement of vines that fail to germinate
Yield per hectare: 9/10 tons/ha
Altitude: from 140 to 170 meters above the sea level
Exposure: north/south and east/west
Vine Cultivation: organic certified, low-impact cultivation according to the lunar calendar
Harvest: manual in boxes at the end of August

Wine Making

Selection: vibrant selection belt, manual selection belt
Mashing: the non de-stemmed and non crushed grapes remain inside the drum for a period of 2 to 5 hours, after the soft pressing happens. The resulting free-run and pressed musts are fractioned.
Fermentation: thermo-controlled at 10°C in inox untile the sugars are exhausted with the use of selected yeasts
Blending: in November with the waning moon
Second fermentation: 100-day charmat method, cold stabilization
Bottling: in March with the crescent moon of spring

Wine tasting

At 6°C, to be uncorked gently and poured into long stemmed glasses in two consecutive moments. A wine of excellent freshness given by a decisive but balanced acidity and a palate of pomegranate, grapefruit and peach. It closed dry. Ideal as a welcome aperitif, with Mediterranean antipasti, fish and vegetables dishes.

Conservation

In a fresh and dark place, preferably between 12° and 18°C; avoid long stocking in fridge. It will express its best freshness and drinkability in the first 16 months after the bottling.
